The 2023 Fairbank Rosé upholds our tradition of creating highly enjoyable rosé wines from our own harvest. Staying true to previous releases, this wine boasts a lively hue of salmon pink/onion skin and a strong presence of red fruits (apple and strawberries). It also features a musky aroma and a fresh palate, characteristics that define our unique wine.

Whole bunch pressed with the pressings cut fine and fermented separately. Cold settled juices were racked with fluffy grape solids to tank to start fermentation. Once a strong fermentation was established the parcels were transferred to old French barriques to proceed to dryness. To preserve fruit vibrancy the parcels were racked, blended to tank once dry and sulphured to inhibit Malolactic fermentation. A light finning was followed by stabilisation and filtration before bottling in early December 2023.
